My Recipe for Healthy Banana Pancakes

What is more powerful than to start your day right? I believe, that every beginning of a new day is a chance to live a bit better than yesterday. A little bit healthier, happier or more inspired. Embracing whatever positive direction that can drift your day to your better self and to making right choices. I like to practice meditation and mindfulness right after I wake up, because it allows me to not just open my eyes, but also my mind. Just finding ten minutes in your morning routine when you stay still for a moment and reconnect with yourself and the world, makes a difference.

Even though I am such a fan of mornings and morning routines, today’s is about breakfast. Fluffy, healthy and yummy banana pancakes. It’s perhaps not as quick as filling your bowl with some easy whatever comes from the box, but when you want to treat yourself, it’s sooo worth it! I have tried so many recipes for heathy banana pancakes but with time I have mastered it to the best version I truly enjoy. Maybe some breakfast genious has already brought this recipe, I have no idea, but I am sharing this one from my own experience and my own cooking skills.

I follow a plant based diet 95 % of the time, so that’s why you will find in this recipe an egg as one of the ingredient. But it is totally optional. I would just suggest to add a spoon of coconut oil instead of the egg. Otherwise it gets quite sticky on the pan.

Here we go:

For about 6 small pancakes, you will need:

  • 1/2 – 1 ripe banana (depends on your sweet tooth)
  • 2 tablespoons of oats
  • 1 tablespoon of coconut flour
  • half a cup of almond milk (any other plant milk)
  • cinnamon/shredded coconut
  • a teaspoon of baking powder
  • 1 tablespoon of vegan protein
  • 2 egg white
  • stevia

You mix everything in a blender. Then pour the mixture in a pancake pan and leave until the they are golden brown. That takes about 1-2 minutes on each side.

I prefere eating them just plain, but you can enjoy them also with berries, almond butter, coconut yoghurt or whatever you like to. Be creative and let me know how you enjoyed them!
